Gluten Free Peanut Butter & Banana Pancakes



  • 2 Cups gluten free oat flour
  • 1 tsp. baking powder
  • 1 tsp. salt
  • 1 tsp. vanilla extract
  • 1 Tbsp. agave nectar syrup
  • 1 tsp. cinnamon
  • 1/2 Cup Pb2 powder
  • 2 ripe bananas
  • 2 eggs
  • 1 Cup vanilla almond milk

Mix all of the ingredients into a large mixing bowl, until smooth. Scoop 1/2 Cup of batter on 400’F griddle or in a saucepan over a medium high flame. Recipe yields about 12, 10in. pancakes. Top with fruit and sprinkled cinnamon to add some sweetness. A great recipe for breakfast, lunch, or dinner. Food is fuel, no matter what time of day and regardless of what the media might portray as a typical breakfast!
