– 1/2 cup chopped carrots
-1/4 cup chopped green bell peppers
– 1/2 cup feta cheese
– 3 tbsp. apple cider vinegar
– 1 tbsp. olive oil
– salt & pepper to taste
Mix all ingredients together, refrigerate & serve when ready!

Dinner doesn’t have to be complicated. In fact, some of the healthiest recipes are quick and easy. This salad took me all of 5 minutes to prepare! What’s in it? Arugula leaves, canned chick peas (rinsed & drained), canned pineapple chunks (drained out of it’s 100% juice), crumbled goat cheese, a sprinkle of pepper and drizzled with oil & vinegar.
