All of the recipes I post are 100% reflective of my diet. I will never post food that I have not eaten myself.

If I had to label the way I eat, I would call myself a “Gluten-Free Flexitarian.” Two years ago I tried the gluten-free diet to alleviate excessive bloating and migraines that I experienced far too regularly. Although my blood test for Celiac Disease (an autoimmune disease where the ingestion of gluten leads to damage of the small intestine) came back negative, my symptoms were immediately relieved when I removed gluten from my diet. At the time I was a vegetarian for 6 years. And although the gluten-free vegetarian diet is possible, it was too challenging and restrictive for me to follow, which is why I decided to include meat (chicken and fish mostly) seldom in my diet. After about a year of battling, I have finally mastered the art of including rich, whole foods while avoiding the daily discomfort.

Whether you have Celiac disease, a gluten-sensitivity, or just want to learn to eat healthy, these recipes are for you. The Gluten-Free Flexitarian diet is a great way to incorporate more fruits, vegetables, and whole grains, while consuming well-balanced meals.
